Deboned ecological por loin (clean and flayed)
Salted ecological ham.
Weight: 4 - 6 Kg.
Curing: 20 meses mínimo.
Preparation: Hams are deboned and individually rubbed, salted in a cold atmosphere and then dried in the cellar.
Excellent appearance, quality shape and perfect tone. As a result of our animals maturing without restrictions, a slice of meat shows good marbling and distribution of the fat and the meat is brightly coloured with strong hints of toasting - a result of the curing process.
Aroma and taste:
Very aromatic, excellent salt content with a juicy texture that is very consistent. An intense flavour, with notes of aromatic herbs and hints of sweetness akin to honey. The finish is very pleasant and lengthy.
