There are 12 employees and nearly 70 of production is exported to Europe. In Spain they sell to supermarkets as well as to specialised shops and traditional traders.
Star product: Without a doubt the Rioja chorizo, with its sweet and spicy varieties, says Delia. However, as she explains, as this is an ecological operation, almost all of our products are highly specialisedunique.

Family-run and tradition: Embutidos Luis Gil is notable for being family-run and artisan, for constantly being on the lookout for quality and innovation and for ensuring the health of their animals. Currently, they are embarked on a project that links the product to its point of origin, producing cold cuts and fresh meat - 100 ecological products from their own livestock. They sell gran reserva ham and shoulder, ecological chorizo extra, ecological sausage extra, ecological pork belly extra, ecological loin extra, ecological pork nape extra, ecological pork pâté, butifarra, black pudding and sobrassada.

Unspoilt location: Their pig population run free; there is extensive production; they graze slowly and in harmony with nature and mankind. This guarantees the quality of the product. The pigs feed for a year on the natural resources on the estate, favouring a fattening process at a gentle pace, thus guaranteeing quality in terms of product texture and flavour.

The estate -El Encinar de Ocón - comprises over 100 hectares of scrubland, covered with leafy woodland comprised of Holm-oak and oak trees. An unspoilt location with a rich historical, cultural and archaeological heritage, declared a World Biosphere Reserve by UNESCO.
