Preparation: ion of pieces in the cutting room cut and sliced in our style to obtain the characteristic shape.
Salted, cold cured and then packaged.
Well-conformed with an excellent tone. The fat is well-interspersed through the cut and well-distributed through the lean meat. Very large with suitable mould from curing. Meat is subtly coloured, strong fat interspersion tones.
Aromas and taste:
Intense, pleasant aromas and flavours, with notes of aromatic herbs. Sweetness akin to honey and toasting. Very consistent texture, predominantly juicy and chewable.
Persistent flavours, good taste and aroma.
